More healthy eating tips. Tasty too!

We don’t do diets, healthy simple nutrition is the way forward. A back-to-basics approach is the most sensible long term solution to controlling eating habits and subsequently managing your weight.

Here’s another great simplified recipe, less than 500 cals, packed with protein, good carbohydrates, low in saturated fat and mega tasty!

 

KEDGEREE, (smoked fish, spices and rice)!

Ingredients to serve 2 people or 2 meals!

1 large egg

2 bay leaves

225g smoked white fish ( I use mackerel)

Ginger

Fresh Chili

Spring onions

Corriander

1 tsp mustard seeds

1 tsp turmeric

Olive Oil

Microwave Brown rice

150g frozen peas

1/2 lemon

100g green beans

Other greens/cabbage/spinach

 

Fill a frying pan with boiling water, boil the egg, add bay leaves and fish then simmer approx 10 mins.

Finely chop 3cm ginger, chili, spring onions & coriander.

Mustard seeds & turmeric into another pan with some olive oil. After 2-4 mins add the chopped chili and ginger etc

Add green beans and Veg to another pan of boiling salted water for 3-5 mins

Stir Cooked rice and some frozen peas into the pan with the chili, ginger etc. 3-5 mins.

Drain greens and leave to steam dry. Remove the fish, discard skin and flake fish into the rice mix. Peel the boiled eggs and chop then add to the mix.

Add a little olive oil and lemon juice to the beans/veg.

Serve with a couple of spoons of natural low fat yoghurt with a glug of sweet chili sauce mixed in!
